Roasted Mushrooms

Ingredients
- 1 lb cremini mushrooms, washed, trimmed and quartered
- 12 sprigs fresh Thyme
- 2 T fresh parsley, chives, or tarragon
Instructions
- Toss the mushrooms in olive oil, then season with salt and pepper.
- Spread the mushrooms on a foil-lined sheet tray, spread the thyme sprigs over the mushrooms, then roast at 375 until the mushrooms release their liquid. Drain the liquid and continue roasting until browned.
- Discard the thyme sprigs, plate, dress with the additional herbs, and serve.
