Roasted Mushrooms

  1. Toss the mushrooms in olive oil, then season with salt and pepper.
  2. Spread the mushrooms on a foil-lined sheet tray, spread the thyme sprigs over the mushrooms, then roast at 375 until the mushrooms release their liquid. Drain the liquid and continue roasting until browned.
  3. Discard the thyme sprigs, plate, dress with the additional herbs, and serve.
